Calendula Flowers have a long history of use. In ancient Greek, Roman, Middle Eastern and Indian cultures it was used as a medicinal herb as well as a dye for fabrics, foods and cosmetics. Many of these uses for Calendula persist today especially for the treating of skin wounds, abrasions and other afflictions and infections of the skin. It has been said to be of particular use as an anti-inflammatory agent. Modern plant pharmacological studies have shown that Calendula extracts often have anti-viral, anti-genotoxic and anti-inflammatory properties in vitro. Steeping Calendula Flowers in oil also produces a therapeutic oil which protects the skin and speeds the healing process. Calendula florets are edible. They are often used to add color to salads, or added to dishes as a garnish and in lieu of saffron. The leaves are edible but are often not palatable. They have a history of use as a potherb and in salads.
